 One-Pan Lemon Garlic Chicken & Veggies 🥦🍋

Why You’ll Love It: Minimal cleanup, packed with protein, and full of flavor!

Ingredients:

  • 2 chicken breasts
  • 1 zucchini, sliced
  • 1 bell pepper, sliced
  • 1 cup Asparagus
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Juice of 1 lemon
  • Salt & pepper to taste

Instructions:

  1. Preheat oven to 400°F.
  2. Place chicken and veggies on a baking sheet.
  3. Drizzle with olive oil, garlic, oregano, lemon juice, salt & pepper.
  4. Bake for 25 minutes or until the chicken is fully cooked.
  5. Serve & enjoy!

 

 

Turkey & Spinach Stuffed Peppers 🌶️🦃

Ingredients:

  • 4 large bell peppers
  • 1 lb ground turkey
  • 1 cup spinach, chopped
  • 1/2 cup cooked quinoa or brown rice
  • 1/2 cup tomato sauce
  • 1 tsp garlic powder
  • 1/2 tsp salt & pepper

Instructions:

  1. Preheat oven to 375°F.
  2. Cut the tops off bell peppers and remove the seeds.
  3. Cook turkey in a pan until browned, then mix in spinach, quinoa, tomato sauce, and spices.
  4. Stuff peppers with turkey mixture.
  5. Bake for 20 minutes. Enjoy!

Sheet Pan Honey Garlic Salmon & Asparagus 🐟🍯

Ingredients:

  • 2 salmon fillets
