Crockpot Beef Stew
Ingredients:
- 1 ½ pounds of beef stew meat, cubed
- 3 large carrots, sliced
- 2 medium potatoes, diced
- 1 medium onion, chopped
- 2 celery stalks, sliced
- 3 cups beef broth (low sodium)
- 2 tablespoons tomato paste
- 2 garlic cloves, minced
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons flour (optional, for thickening)
- 1 tablespoon olive oil
Instructions:
- Sear the Beef: Heat olive oil in a skillet and sear the beef cubes until browned. Transfer to the crockpot.
- Prepare Vegetables: Add carrots, potatoes, onion, and celery to the crockpot.
- Add Broth and Seasonings: Stir in beef broth, tomato paste, garlic, thyme, paprika, salt, and pepper. Mix well.
- Cook: Cover and cook on low for 7-8 hours or on high for 4-5 hours.
- Thicken (Optional): If you want a thicker stew, mix 2 tablespoons of flour with a bit of water to create a slurry. Add this to the crockpot 30 minutes before serving and stir.
Crockpot Chicken Tacos Recipe
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 packet of taco seasoning (or two tablespoons of homemade taco seasoning)
- 1 cup of salsa (any variety you like)
- 1 can of diced tomatoes with green chilies (optional for extra flavor)
- 1/4 cup of chicken broth or water (optional, for more moisture)
- Taco shells or tortillas
- Optional toppings: shredded lettuce, diced tomatoes, shredded cheese, sour cream, guacamole, or fresh cilantro
Instructions:
- Prepare the Chicken: Place the chicken breasts in the bottom of your crockpot.
- Add Seasoning and Salsa: Sprinkle the taco seasoning evenly over the chicken. Pour the salsa and canned diced tomatoes with green chilies (if using) on top.
- Cook: Cover and cook on low for 6-8 hours or high for 3-4 hours. The chicken should be tender and easily shredded with a fork.
- Shred the Chicken: Use two forks to shred the chicken directly in the crockpot. Stir the shredded chicken into the juices to soak up the flavors.
