Breakfast On The Go

Overnight oats and breakfast burritos are perfect solutions for families on the go, especially with kids. Both meals are quick to prepare and can be made in advance. They are a lifesaver for me when getting my kids up and ready for school. I know these are perfect for my husband when he's making his commute to work. He can simply take them out and eat them while on the train.
Overnight oats provide a healthy, grab-and-go breakfast that you can tailor to your liking with various fruits, nuts, and toppings. Breakfast burritos are easy to pack and can be made with protein, vegetables, and cheese, offering a balanced meal that energizes kids throughout the day. Both options are simple, convenient, and full of essential nutrients, making them ideal for families with hectic schedules.

Breakfast Burrito 

Ingredients:

  • 2 large eggs
  • 1 tablespoon butter or olive oil
  • 1/4 cup shredded cheese (cheddar, Monterey Jack, or your favorite cheese)
  • 1/4 cup cooked bacon, sausage, or ham (optional)
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/4 cup salsa or hot sauce (optional)
  • 1 large flour tortilla (or a gluten-free alternative)
  • Salt and pepper to taste

Instructions:

  1. In a skillet, heat the butter or olive oil over medium heat. Add the diced bell peppers and onions. Cook for about 3–5 minutes, until the vegetables are softened.
  2. Crack the eggs into a bowl, whisk them, and season with a pinch of salt and pepper.
  3. Pour the eggs into the skillet with the peppers and onions. Scramble the eggs and cook them until they are fully set and cooked through.
  4. If using, add the cooked bacon, sausage, or ham to the eggs and stir to combine.
  5. Remove the skillet from the heat. Sprinkle the shredded cheese over the eggs, allowing it to melt slightly.
  6. Lay the flour tortilla on a flat surface. Spoon the egg mixture onto the center of the tortilla.
  7. If desired, add salsa or hot sauce over the eggs before folding.
  8. Fold the sides of the tortilla in, then roll it tightly from the bottom up to form a burrito.
  9. If you prefer a crispy burrito, you can heat the wrapped burrito in a skillet over medium heat for 1–2 minutes on each side until golden brown.

I usually make enough for the week and wrap them in tinfoil. They can be unwrapped and reheated before leaving you school/work saving you time in the morning!

Overnight Oats 

Ingredients:

  • 1/2 cup rolled oats
  • 1/2 cup milk (dairy or non-dairy)
  • 1/4 cup Greek yogurt (optional, for extra creaminess)
  • 1 tablespoon chia seeds (optional, for added fiber and texture)
  • 1 teaspoon honey or maple syrup (optional, for sweetness)
  • 1/2 teaspoon vanilla extract (optional)
  • Toppings: Fresh fruits, nuts, seeds, or nut butter (as desired)

Instructions:

  1. In a jar or container, combine the rolled oats, milk, yogurt, chia seeds, and sweetener (if using). Stir everything together until well mixed.
  2. Cover the jar or container with a lid or plastic wrap and refrigerate overnight (or for at least 4 hours).
  3. In the morning, give the oats a good stir. If the oats are too thick, you can add a little more milk or water to reach your desired consistency.
  4. Top with your favorite toppings like sliced bananas, berries, nuts, seeds, or nut butter.
